B + B Onion Soup
Ingredients
1 1/2 cups thinly sliced white onions
4 tablespoons butter
6 cups beef broth
1/4 cup dry sherry
dash of cayenne and black pepper
several slices of French bread
1/4 pound of Gruyere and Swiss cheese
1/4 grated Parmesan cheese
1. In heavy saucepan, sauté onions in butter until brown.
2. Add broth and cover and cook on low for thirty minutes.
3. Add sherry and pepper to taste.
4. Place a 1/2 inch slice of well toasted French bread in the bottom of a heavy oven safe soup bowl or crock.
5. Pour in soup and top with a slice of Gruyere and a slice of Swiss and a spoonful of Parmesan.
6. Broil until bubbly under broiler or place in the oven on a cookie sheet at 275 degrees for five minutes.
