Boursin Baguettes

Even low-carb dieters find these warm appetizers difficult to resist. They are easy to assemble and can feed a few dozen people with little prep time. I find myself serving these often and bringing them to parties as well. They always disappear in minutes!

Ingredients
1 baguette French loaf
1 pkg. Boursin herb cheese (room temp)
1 large jar marinated asparagus (drained and chopped fine)
2-3 medium sized ripe tomatoes (washed, cored and chopped fine)
fresh basil leaves
1 pkg. (2 cups) shredded mozzarella cheese

Directions
1. On cutting board, slice baguette loaf crosswise into 1/2 - 3/4” pieces.
2. Lay all the bread pieces on a large cookie sheet. I cover with foil first for easy clean up later.
3. Spread each bread surface with a thin layer of boursin.
4. Lay a basil leaf on top of cheese layer.
5. Carefully add a layer of chopped artichoke.
6. Add another layer of chopped tomatoes.
7. Sprinkle mozzarella over all and bake for 10-12 minutes at 350 degrees.
8. Arrange on platter and get out of the way!
