Sausage Stuffed Mushrooms
Low carb dieters love these bold flavored hors d’ oeuvres. You can fill mushroom caps with almost anything. You may want to try a variety of stuffings, such as shrimp, clam, oyster, cheese or even pesto. Bon appetit!
Ingredients
¾ stick butter
1 pkg. spicy breakfast sausage (Jimmy Dean)
1 pkg. cream cheese (room temp)
1 small onion
½ cup Pepperidge Farm herb stuffing mix
1 clove garlic
2 dozen medium mushroom caps
fresh parsley for garnish
Directions
1. Wash mushrooms. Remove stems. Place caps bottoms up in rows on cookie sheet.
2. Brown sausage until crumbly. Drain fat.
3. Sauté onion until tender.
4. Mix onion, cream cheese and cooked sausage in bowl.
5. Add breadcrumbs until mixture holds together with stuffing consistency.
6. Fill mushroom caps.
7. Add a small parsley sprig and bake 15-20 minutes at 350 degrees.
