Triple Berry Blintzes
Crepes are one of my favorite meals to serve to guests. They are versatile and elegant in presentation and can be made into everything from main courses to desserts. They resemble presents in that each guest receives their own little personal bundle and much of the enjoyment comes from discovering what’s inside. These triple berry Blintzes were based on the ingredients given to us at the Bed & Breakfast, but you can be adventurous and try strawberries, peaches, cherries or apricots.
Crepe Ingredients
2 cups flour
½ teaspoon salt
3 cups milk
4 eggs
2 tablespoons vegetable oil
Crepe Instructions
1. Beat all ingredients well until crepe batter is runny.
2. Cover and let stand room temp for 3-4 hours.
3. Prepare filling.
4. Whip cream until stiff. Add a splash of vanilla and powdered sugar to taste.
5. Spoon into pastry bag fitted with star tip.
6. Twist top and refrigerate whipped cream for now.
7. Heat crepe pan (a 9” omelet pan will also work.)
8. Remix crepe batter.
9. Put ½ pad butter (½ tablespoon) in pan and swirl around to cover bottom and sides of pan.
10. Quickly pour ¼ cup of batter in pan and swirl again, being careful to cover all area on bottom of pan.
11. When center is bubbly and sides start to peel away from edge, either use your fingers to pull up the crepe and flip it over or try an extra thin metal spatula. You can also give the pan a swoop up and around with a flick of the wrist and toss it in the air and catch again to lightly cook the other side. You may have seen this done on TV and I know you can do it with a bit of practice. It’s well worth the effort!
12. Lay hot crepe on plate. Spread 2 tablespoons of cheese mixture down center of crepe.
13. Place 2-3 tablespoons of berry mixture on top of cheese layer
14. Fold each side of the crepe up and over the center mixture and tuck in.
15. Pipe whipped cream onto top and garnish by adding either more berry sauce over cream or reserved fresh berries.
16. Serve immediately.
Filling Ingredients
1 pint blueberries
1 pint red raspberries
1 pint black raspberries
6 oz. ricotta cheese
6 oz. cottage cheese
6 oz. cream cheese (room temp)
raspberry preserves
honey to taste
whipping cream
Filling Instructions
1. Heat preserves.
2. Add berries and simmer lightly (reserve a few of the more perfect berries for garnish.)
3. Add honey to taste. The blackberries added a tartness that needs sweetener.
4. Make arrowroot paste by mixing powder with water in small monkey dish.
5. Slowly add to heated fruit mixture until desired consistency is achieved.
6. Remove from heat.
7. Blend cheeses together.
8. Follow crepe directions from 12-16.
