Smoked Salmon Wrapped Asparagus

Ingredients
tender fresh asparagus tips
extra thinly sliced smoked salmon
4 oz. blue cheese block
2 oz. cream cheese
4 oz. sour cream
dash of Worcestershire
dash of Tabasco
1 garlic clove minced


Instructions 1. Blanche asparagus tips until bright green and barely tender: 3-5 minutes maximum.
2. Plunge into pot of cold water to arrest the cooking process. This preserves the tender budded tips.
3. Pat dry on paper towels.
4. Wrap the center of each asparagus spear with a piece of salmon.
5. Line up bundles on a serving tray.
6. Mix remaining ingredients vigorously until smooth.
7. Scoop into small ramekin and place next to asparagus on tray.
8. Garnish as desired.
