Grilled Cornish Game Hens Marinated in Chili, Orange & Rosemary, Served with Wild Rice Pilaf and Grilled Vegetables--Serves 6

Ingredients
½ cup of Dijon mustard
1 orange, zest & juice
¼ cup of orange marmalade
2 shallots-minced
3 cloves of garlic-minced
1 jalapeno-minced
1 tablespoon of chili powder
1 tablespoon of rosemary-chopped
1 tablespoon of olive oil
1 teaspoon of fresh crack pepper
3 Cornish game hens, rinsed and split in half
kosher salt

Procedure
Make the marinade by mixing all of the ingredients together and pour over hens. Allow the hens to marinate for at least one hour or overnight. Season the hens with kosher salt before grilling and cook over medium heat about 35 minutes until done. Continue to baste the hens with the marinade while cooking. Serve with wild rice pilaf and grilled vegetables. *Note: This marinade is also great on chicken, fish and pork. You can also roast the hens indoors at 400 degrees for 40 minutes, if the weather is not conducive for outside grilling.

Salting the hens right before you cook them allows them to remain juicy.
