Roasted Rum-Spiced Apples with Vanilla Ice Cream- serves 6
Ingredients
3 apples-peeled, halved and cored (Granny Smith, Pippin or McIntosh work well)
1 tablespoon of melted butter
6 tablespoons of dark rum
1/3 cup of brown sugar
½ teaspoon of cinnamon
½ teaspoon of allspice
½ teaspoon of clove
pinch of nutmeg
Procedure
Heat oven to 400 degrees. Toss apples with all ingredients and place on a foil lined baking sheet, making sure to place all juices and spices on the apples. Bake for 30-40 minutes until tender. Serve with a scoop of vanilla ice cream or frozen yogurt in the center of the apple. Drizzle a little of the syrup from the bottom of the pan onto the plate and serve.
*Note: You can also use pears, peaches, apricots or pineapple for this recipe. Sprinkle with toasted pecans for added flavor and texture.
