Old Fashion Apple Bread Pudding with Whiskey-Caramel Sauce- serves 6

Ingredients
8 cups of day old French bread, cut into 1"inch cubes
2 cups of apples, peeled and small diced
3 cups of milk
3 eggs plus 2 yolks
¾ cups of sugar
2 teaspoons of good vanilla extract
½ cup of golden raisins
½ cup of whiskey


Procedure
Preheat the oven to 375 degrees.

Place bread and apples in a large bowl and pour milk to soak. In a separate bowl whisk eggs, yolks, sugar and vanilla until incorporated. Place raisins in the whiskey and microwave for two minutes until raisins plump and soak up the whiskey. Place egg and raisin mixture with the bread and gently coat. Place in a greased baking dish and bake 35 minutes until the top is slightly golden. Cool 15 minutes before serving. Serve with whiskey caramel sauce.

Whiskey Caramel Sauce

Ingredients
1 cup of sugar
½ cup of heavy cream-warmed slightly
¼ cup of whiskey
2 tablespoons of butter


Procedure
Place sugar in a large heavy sauce pan over high heat and caramelize. It will take about five minutes. When the sugar becomes a deep amber color, remove from the heat and slowly and carefully whisk in the cream, whiskey and butter. The sauce is extremely hot and can splatter so be careful. Place in a decorative bowl and serve with bread pudding.

*Note: This sauce can also be served with my apple tart and is great on ice cream and sundaes.
