Apple and Cranberry Compote-serves 2

Ingredients
2 teaspoons of butter
½ of a small onion-small dice
1 clove of garlic-minced
1 teaspoon of freshly grated ginger
1 cup of diced apples (Fuji, Golden Delicious and Gala work well)
½ cup of fresh cranberries
¼ cup of brown sugar
½ teaspoon of ground clove
¼ teaspoon of ground allspice


Procedure
Place first five ingredients into a small saucepan and sauté until tender, about five minutes. Add the remaining ingredients cook over medium heat 15 more minutes. Serve at room temperature.

*Note: For variation, this compote is also delicious with lamb, duck and chicken.
