Braised Fennel & Cabbage- serves 6

Ingredients
1 tablespoon of olive oil
1 onion-sliced
3 fennel bulbs, sliced
1 head of cabbage-sliced
2 apples, peeled, cored and juilienned
1 cup of chicken stock
½ teaspoon of caraway seed
2 tablespoons of white vinegar
1 tablespoon of sugar
1 tablespoon of whole-grain mustard
1 teaspoon of kosher salt
½ teaspoon of fresh cracked pepper


Procedure Heat oil into a pot over high heat and add onion and fennel. Cook about five minutes. Then add all remaining ingredients, cover and bring to a boil. Reduce to a simmer and braise for 30 minutes until tender. Serve with Turkey-Apple Sausage.

*Note: Add small white potatoes to this dish while cooking and it would be the perfect accompaniment for your corned beef on St. Patrick's Day.
