Week 3- Darlene's Recipe: It's Tiki-Time Cake

It's Tiki-Time Cake

Cake
- 3 cups of all-purpose flour
- 1 ½ cup of sugar
- 1⁄2 cup of brown sugar
- 1 t. baking soda
- 1 t. cinnamon
- 1⁄2 t. salt
- 5 bananas
- 1 cup of drained crushed pineapple
- 1 cup of canola oil
- 2 lg. eggs
- 2 t. vanilla extract
- 1 cup of chopped pecans

Icing
- 1⁄2 cup of butter – room temp
- 16 oz. cream cheese – room temp
- 5-6 cups of powdered sugar
- 1 T. vanilla extract
- 3⁄4 t. cinnamon

Recipe
Preheat oven 350 degrees. Butter & flour 9" pan. Sift flour, sugars, baking soda, cinnamon & salt in a bowl. Chop up all bananas to smaller bits & whisk by hand with pineapple, oil, eggs & vanilla. Pour into dry mix & fold together. Do not overbeat. Fold in chopped pecans. Spread 3 + cups in a pan. Bake 30-35 min. Transfer cake to wire rack & cool 10 min before turning on rack to cool.

Icing
Beat butter & cream cheese til combined and then beat in sugar, vanilla & cinnamon. Spread cake with thin coat of icing and decorate center w/ dried pineapple, pecans & banana chips.

Note: This recipe is enough batter for two 9" pans.  Only use 3+ cups in a pan.  You can also choose to bake two 9" pans and make this a layer cake.
