Home Cooked for the Holidays: David Tutera

Party planner, entertaining expert and star of "David Tutera: Unveiled," David Tutera stopped by for our Home Cooked for the Holidays series. He showed the ladies how to make some simple treats that are perfect for your next gathering. Here are his fun and charming recipes!



Caramel Apple Pops

Ingredients:

Green and Red Apples

Lemon Juice

Caramel Apple Dip


Tools:

Melon baller

Large bowl

Lollipop sticks or clean twigs


Instructions:

Fill the bowl half way with cold water. Add lemon juice, about one tablespoon per cup of water, to the bowl. Using the melon baller, scoop even sized and round balls out of the apples and place in the bowl. Once all of your apples have been balled, pat them dry one at a time, insert a lollipop stick (or twig) into each, and place on a platter. Slightly warm the caramel dip in the microwave (a few seconds will do) so that it is slightly runny. Dip or drizzle the apple balls with the caramel and serve your mini Caramel Apple Pops! These should be similar in size and shape to cake pops.

 

Cozy S'Mores Cupcakes

Ingredients:

Chocolate cupcake mix, plus necessary ingredients and tools

Cinnamon graham crackers

Mini marshmallows


Tools:

Extra tall cupcake liners (available at most craft stores, also known as tulip baking cups)

Rolling pin and large reseal-able bag

Brulee torch

Microwave safe bowl


Instructions:

Make the chocolate cupcakes according to the instructions on the box, using the extra tall cupcake liners instead of regular ones. Let cool completely. Place graham crackers in the zip-tight bag and crush using the rolling pin so that there are little to no large pieces left. Sprinkle a layer of crushed graham crackers onto each of the cooled cupcakes, approximately 1/8" thick. Microwave the marshmallows for just a few seconds until they are slightly sticky and gooey, but NOT melted. Spoon warm marshmallows onto the tops of each of the cupcakes, approximately 1" thick, thinking of how traditional icing would look. Using a brulee torch, toast the tops of the marshmallows until they are just browned, like a s'more!

 

Fall Chocolate Pizza

Ingredients:

Pre-cooked 12" thin crust pizza

Hazelnut chocolate spread

1 cup mini marshmallows

1 cup candy corn, candy pumpkins, etc.

1 cup peanut butter candies

1 cup graham cracker snacks or honey graham cereal

Other candies as preferred


Tools:

Pizza wheel


Instructions:

Preheat oven to 450F. Place pre-made pizza crust on a cookie sheet and bake for 5 minutes. Remove crust from oven and spread with a layer of hazelnut chocolate spread. Top with fall themed candies and treats and return pizza to over for an additional 5-6 minutes until the marshmallows are just toasted. Cut slices using a pizza wheel and enjoy!

 

Pumpkin & Bourbon Concoction

Ingredients (per drink):

2 tbsp. canned pumpkin puree

1½ oz. bourbon

1 oz. maple syrup

½ oz. orange-flavored cognac liqueur

Dash orange bitters

Ginger cookies (for garnish)


Tools:

Cocktail shaker

Strainer


Instructions:

Combine the pumpkin, bourbon, maple syrup, orange-flavored cognac liqueur, and bitters in a cocktail shaker with ice. Shake vigorously and strain into a cocktail glass with more ice. Garnish with a ginger cookie laid across the rim of the glass.
