In the movie, Tommie Taylor (played by Ellen Burstyn) loves to cook, and is particularly famous for her Jambalaya. She now hopes to publish her recipe book "Look What's Cooking! Recipes from the Canal Street Brothel of New Orleans" written with Victor T. Galluzzo.

SHRIMP & SAUSAGE JAMBALAYA
2 lbs. peeled shrimp
1 lb. sliced smoke sausage
1¼ cups finely chopped onions
1½ cups finely chopped celery
1 cup finely chopped bell pepper
1 tbsp. chopped garlic
1 6 oz. can tomato paste
1 8oz. can tomato sauce
3 bay leaves
1 tsp. dried thyme
½ tsp. black pepper
1 tsp. salt
2 cups rice
2½ cans shrimp or chicken stock
1 cup chopped shallots
½ cup fresh chopped parsley
¼ cup vegetable oil

Heat oil in large Dutch oven over medium heat. Saute onions, celery, garlic, and bell peppers until soft. Add tomato paste and sauce. Add a pinch of sugar. Cook for about 7 minutes. Add shrimp, sausage, bay leaves, thyme, cayenne, black pepper and salt. Cover and simmer 15 minutes, stirring often. Add rice, stock, shallots, parsley, and then cover and cook on low heat for 20 minutes or until rice is done.
