Week 2- Elaine's Recipe: Ginger Cookies

Ginger Cookies

6 T Butter – soft
½ c brown sugar – packed
1 extra large egg – beaten – use only half
½ c dark molasses
1 c plus 2 T all purpose flour
1 t baking soda
½ cinnamon
½ t ginger
¼ t ground cloves
1/8 t salt
½ c crystallized ginger chopped – or more to taste
Granulated sugar for dipping

Combine butter, brown sugar, half of egg and molasses by hand. Combine flour and remaining dry ingredients. Mix dry ingredients with butter mixture just until blended. Do not over mix.  Cover and chill thoroughly.

Preheat oven to 350. Measure tablespoon sized cookies. Place several pieces of chopped ginger to taste into dough. Roll into balls.  Dip tops in granulated sugar.  Place 2" apart on baking sheet. Bake 10-12 minutes until set. Remove from baking sheet and cool on rack.
