Greek Style Tomato Salad
Serves 4


For the salad:

8 cherry tomatoes, halved

4 heirloom tomatoes, large diced

8 pitted olives

2 tbl sliced pepperoncini

1 tbl fresh chopped flat leaf parsley

1/4 julienned red onion

1/4 cup sliced English cucumbers

1/2 cup diced goat's milk feta

Salt and pepper (to taste)

For the vinaigrette:

1/4 cup evoo

1/4 cup canola oil

3 tbl red wine vinegar

3 tbl water

2 tsp dried basil

2 tsp dried oregano

2 tsp garlic powder

2 tsp black pepper

2 tsp onion powder

2 tsp Dijon mustard

1/2 tsp salt


Whisk all ingredients except oil then drizzle in oil to emulsify.

Boneless Pork Chops with
Red Bliss Potatoes, English Peas and Roasted Peppers

Serves 4



Pork Chops

(4) 8oz. boneless Pork Chops

Salt & pepper



Season the Pork Chops and then grill or pan roast until medium.


2 lbs cooked red bliss potatoes

4 hard-boiled eggs, crumbled  

1 tbl red onion, minced

1 tbl scallion, minced

2 tbl cooked bacon crumbled

1/2 tbl Dijon mustard

2 tbl red wine vinegar

1 cup mayonnaise

Salt and pepper (to taste)


Crush the red bliss potatoes and combine all ingredients, season with salt & pepper.


English peas & roasted peppers

1 tbl evoo

2 cups blanched English peas (frozen will do)

4 tbl butter

1 clove garlic, minced

1 tbl red onion, minced

2 tbl lemon juice

2 tbl roasted red peppers, diced

2 tsp minced chives

2 tsp minced parsley

Salt and pepper


4 sprigs fresh Italian parsley.

Place the red bliss potatoes on plate and top with pork.

Spoon the pea mixture over the pork chops and garnish with parsley.

Root Beer & Toasted Marshmallow Milkshake

Serves 2


4 oz. milk

3 oz. root beer syrup or 1 can root beer soda reduced until syrup consistency

4 toasted marshmallows

4 root beer barrels, crushed


Blend ingredients.

Add 3 cups vanilla ice cream.

Pour into glass and garnish with more toasted marshmallows and crushed root beer barrels.
