It's the most wonderful time of the year, and there's no better way to celebrate than with something sweet. This winter, treat yourself by baking up some of Tracey Bregman's (Lauren Fenmore) delicious peanut butter chocolate cookies.

Peanut Butter Chocolate Cookies

1 cup creamy peanut butter
1/2 cup granulated sugar (for a vegan option, use coconut palm sugar)
1/2 cup packed light brown sugar
1/2 cup semisweet chocolate chips—sub vegan chips, if desired
1 large egg beaten (for a vegan option, use an egg replacement)
1 teaspoon vanilla extract

  • Preheat oven to 350˚
  • Combine all ingredients in the bowl and stir with a wooden spoon. Then, take 1 heaping tablespoon of dough, form, and set on a cookie sheet.
  • Place the cookies in the oven and cook for 8–10 minutes. The cookies won't brown on top, so check the bottom of one cookie to check for browning.
  • Do NOT eat warm! Wait until they cool completely, and enjoy!

Rich and decadent, this dessert would totally be Fenmore-approved.
