Kate Linder's Sweet Potato Eggnog Pudding

Eggnog has long been a staple during the holidays. Its rich and creamy texture is the perfect addition to any fireside family chat—or to your favorite libation! This season, put a new spin on a classic with Kate Linder's sweet potato eggnog pudding.

Just one bite and you'll see that the only thing sweeter than this dessert is that it came from Kate's mother, Molly Wolveck.

Kate Linder's Sweet Potato Eggnog Pudding


2 16 oz cans of sweet potatoes
2 tablespoons butter, melted
1 cup eggnog
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 tablespoons grated orange rind
1/2 cup finely chopped walnuts

  • Beat sweet potatoes with beater until thoroughly mashed
  • Add melted butter, eggnog, sugar, salt, cinnamon, and ginger
  • Beat until fluffy and blended
  • Fold in rind and walnuts
  • Pour into greased 1 1/2 quart baking dish
  • Bake 375 degrees for 45 minutes 
  • Serves 10–12
